You are gonna love that movie. It was just as you described--the production values of the second plus the laid-back spontaneity of the first.
Rodriguez was really great in his introduction and the Q&A afterward, and at one point, he paraphrased Depp's comment about "isn't there another scene we can shoot?"
He also told a funny anecdote about how Depp really got into this one scene where he gets shot in the arm and then spins around and shoots the other guy--a real action scene. Rodriguez said, "Hey, I thought you didn't like action flicks" (something to that effect), and Depp replied, "You converted me!"
